Polvorones de nuez

Ahora hice polvorones de nuez, también llamados Mexican Wedding Cookies, aunque nunca me ha tocado una boda en la que me den estas galletas! Son deliciosas, de muy pocos ingredientes y una vez más, sin huevo. 

 

Empieza moliendo la nuez en el procesador o licuadora, debe quedar muy finita. These melt in your mouth and have very few ingredients, also, eggless. Start by chopping the pecans in the blender, don’t over do it or you’ll get nut butter.mexican wedding cookies-1Cream the butter and sugar.mexican wedding cookies-2Add the vanilla.mexican wedding cookies-3Pecans.mexican wedding cookies-4Add the flour and salt.mexican wedding cookies-5Make balls with 1 tablespoon of dough and place on a baking tray.mexican wedding cookies-6Bake at 130ºC for 35-40 minutes or until the edges begin to darken slightly. mexican wedding cookies-7Roll the warm cookies in some powdered sugar and let cool on wire racks.mexican wedding cookies-8Just before serving, dust some more sugar.mexican wedding cookies-9 mexican wedding cookies-10 mexican wedding cookies-11 mexican wedding cookies-12 mexican wedding cookies-13

Mexican Wedding Cookies (70-80 cookies)

  • 2 sticks of butter, softtened
  • 1/2 cup powdered sugar (plus more for dusting and rolling)
  • 1 tsp vanilla extract
  • 2 cups flour
  • 1 cup pecans, finely chopped
  • Dash of salt
  1. Cream butter and sugar, add the vanilla.
  2. Add the nuts, flour and salt, mix just until integrated.
  3. Make balls (1 tablespoon of dough each) and place on baking tray (they won’t spread too much).
  4. Bake for 35-40 minutes or until they get abit of color around the edges.
  5. Let cool for a bit and roll them in powdered sugar while still warm. Let them cool in wire racks.
  6. Right before serving, sprinkle more powdered sugar.
